According to the analysts the hottest new ingredient of 2005 will be white tea, ousting its green sister from its podium. For the past three years the popularity of green tea has exploded, due in large part to the health benefits believed to be in these delicate leaves. Research predicts that 2005 will be the turn of white tea. The main ingredient, antioxidants, has already appeared in skincare products and, of course, tea. Expect to see this ingredient popping up in vitamins and healthcare products, hair care, and other food products.

| PAI MU TAN --- Pai Mu Tan leaves are plucked from a special variety of tea bush called Narcissus or “chaicha” bushes. Only 2 leaves and 1 bud are selected. These leaves must show a very light green, almost gray-white color and be covered with a velvety peach fuzz down. The leaves are naturally withered and dried in the sun. If mechanical drying is required, it is a baking process at temperatures less than 40 degrees C. Interestingly, the western cosmetics industry has recently discovered the benefits of white tea.
